Homemade Chili
Brown ground beef.  When almost done, add onion, pepper, and garlic and sauté until tender.  Combine all other ingredients in crock pot.  Add meat mixture.  Simmer on low with lid on for 6 hours stirring often.  Serve with sour cream, Frito Scoops, and shredded cheddar cheese.
1 lb. ground beef
½ cup onion, diced
½ cup green pepper, diced
1-2 cloves garlic, diced
32 oz. tomato sauce
3 cans tomato soup
1 can tomato paste
1 cup water
1 can kidney beans
2-4 tsp. chili powder
½ tsp. salt
¼ tsp. pepper

Chicken Tortilla Soup
Sauté chicken breasts in oil.  When almost done, add carrots, onions, and garlic and sauté until tender.  Add water, chicken bouillon, salt, pepper, and taco seasoning and bring to boil.  Add tortillas/taco shells to broth mixture.  Let boil for 20 minutes or until tortillas/taco shells are thoroughly incorporated into soup stirring occasionally to keep from sticking.  Reduce heat and add cheese.  Simmer until melted.  Add milk and simmer for additional 10 minutes.  If thicker soup is desired, add more diced tortillas and let incorporate into soup.  Garnish with shredded cheese, tortilla strips, green onions, and sour cream.  Serves 8.
2 tbsp. oil
2-4 diced chicken breasts
2 tablespoons corn oil
¾ cup carrot, diced
¾ cup onion, diced
½ tsp. garlic powder or 1 fresh garlic clove, diced
8 cups water
2 tbsp. chicken bouillon
pinch of salt
¼ tsp. pepper
2 tbsp. taco seasoning
8 corn tortillas or taco shells, cut or broken into small pieces
1 cup milk
1 cup Monterey jack cheese or Mexican blend cheese, shredded
Tortilla strips, green onions, and sour cream for garnishing

Cream of Potato Soup
Combine broth, potatoes, onion, and spices.  Boil on medium heat until potatoes are tender.  Smash a few of the potatoes to release their starch for thickening.  Reduce to low heat.  Add cream cheese.  Heat, stirring frequently, until cheese melts.
4 cups water
4 cups potatoes, peeled and cubed
1 tbsp. chicken bouillon
¼ cup onion, minced
½ tsp. seasoning salt
½ tsp. pepper
1 8 oz. package cream cheese, cut into chunks

Vegetable Beef Soup
In a large pot, boil the stew meat and beef bouillon with enough water to keep the meat covered while boiling.  Boil till meat is tender.  Add remaining ingredients and simmer for at least 1 ½ hours.
4 cups water
1 package of stew meat
1 tbsp. beef bouillon
1 large can tomato juice
½ tsp. basil
6 peeled cubed potatoes
2 diced carrots
1 can green beans with juice
1 can corn with juice
salt and pepper to taste
